RHUBARB BAR 
1 c. flour
1/4 tsp. salt
1 egg
2 c. rhubarb, cut fine
1 tsp. baking powder
1/4 c. butter
1 tbsp. milk
1 pkg. strawberry gelatin

Sift together flour, baking powder, and salt. Cut in rhubarb; add beaten egg and milk. Spread in a 9x9 inch greased pan. Cover with rhubarb. Sprinkle gelatin powder over rhubarb. Make topping of 1/4 cup butter, 1 cup sugar, and 1/2 cup flour. Spread over all. Bake at 375 degrees for 45 minutes. Serves 9.

Best used before gelatin sets. Whipped topping is fine in place of topping mentioned.
