SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
2/3 c. vegetable oil
1 1/2 c. sugar
2 tsp. vanilla
2 c. shredded, unpeeled zucchini
1 (5 1/2 oz.) can crushed pineapple, undrained
3 c. flour
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 - 2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chopped nuts (walnuts or pecans)

Beat eggs, oil, sugar and vanilla until foamy. Add zucchini, pineapple and flour. Add remaining ingredients and mix well. Pour into 2 well greased loaf pans, 9x5x3 inches (or 3 smaller loaf pans). Bake at 350 degrees F. for one (1) hour.
