FRIED EGGPLANT 
1 lg. eggplant
4 eggs
2 c. flour
1 c. oil
1/8 tsp. salt
1/8 tsp. pepper

Peel and slice eggplant in 1/8 inch thick slices. Combine flour, salt and pepper in bowl. Beat eggs in separate bowl. Pour oil in 9 inch fry pan and preheat oil. Dip slices of eggplant in eggs and then in flour mixture. Place in frying pan and fry until golden brown.
