FRIED EGGPLANT 
1 med. eggplant
Garlic powder (add as desired to taste)
Oregano (add as desired to taste)
1-2 c. matzo meal
2 eggs (beaten together with 1/4 c. water)
Oil (frying)

Remove skin. Slice into 3/4 inch slices. Cut each slice (circle) into 4 or 5 strips in one direction, then rotate 90 degrees and cut into 4 or 5 strips again. Take the resulting cubes and dunk into a well beaten egg (with or without yolk).

Mix matzo meal, oregano, garlic powder. Dunk to eggplant cubes (with egg) into the matzo meal mixture.
