RICOTTA COOKIES 
1/2 lb. butter
1 lb. Ricotta cheese
2 tsp. vanilla
1 tsp. baking soda
2 c. sugar
2 eggs
4 c. flour
1 tsp. salt

Beat butter and sugar until well blended. Add Ricotta, beat. Add eggs, beat. Mix salt, baking soda and flour together and gradually add to Ricotta mixture. Beat well. Add vanilla last. Batter will be heavy. Drop by 1/2 teaspoonful onto cookie sheet. Bake at 350 degrees for 12 to 15 minutes. Bottoms should be light brown. Keep cookies refrigerated. Makes 10 dozen.
