ITALIAN COOKIES 
1/2 lb. butter
2 c. sugar
2 eggs
1 lb. Ricotta cheese
2 tsp. vanilla
5 c. flour
1 tsp. salt
1 tsp. baking soda
2 tsp. baking powder

Cream together 1/2 pound butter, 2 cups sugar, then add 2 eggs and beat. Add Ricotta and vanilla and beat. Add dry ingredients. Roll into balls. Bake at 350 degrees 10 to 12 minutes on ungreased cookie sheet.

ICING:

1 lb. powdered sugar
1/4 lb. butter
1 egg
1 tsp. vanilla
Food coloring to color white icing
Coconut (optional)

Mix together. Coconut may be sprinkled on top if desired.
