RICOTTA COOKIES 
1/2 lb. butter
2 eggs
2 c. sugar
4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. nutmeg
1 lb. ricotta
2 tsp. lemon/vanilla extract

FROSTING:

2 1/2 c. powdered sugar
4 to 5 tbsp. milk
Vanilla/lemon extract, if desired

Sift together dry ingredients. Set aside. Cream butter and sugar together until light and fluffy. Add eggs and beat well. Add ricotta and extract. Mix in dry ingredients. Drop by tablespoonsful on greased baking sheets. Bake at 350 degrees for 12 to 14 minutes. Frost cookies while slightly warm. Frost cookies while slightly warm. Allow frosting to set before serving.
