PORCUPINE MEATBALLS 
1 1/2 lb. ground beef
1 egg
Dash of salt
1 pkg. dry onion soup mix
3/4 c. rice
2 c. tomato juice
1 1/2 tbsp. sugar

Mix ground beef, egg and the dash of salt, plus 1/4 package of soup mix and 1/4 cup of rice in bowl. Shape into 1 1/2 inch meatballs. Roll in remaining rice. Place in 9 x 13 inch casserole.

Cook tomato juice, sugar and remaining onion soup mix in saucepan, stirring until sugar is dissolved. Pour over meatballs. Bake at 350 degrees for 50 minutes. 8 servings.
