SHOOFLY PIE 
1 c. flour
2/3 c. light brown sugar
1 tbsp. shortening
1 egg, slightly beaten
1 c. molasses
1 c. boiling water, divided
1 tsp. baking soda
Pastry for 9-inch pie

Mix flour and brown sugar; cut in shortening to form crumbs. Set aside 1/2 cup. To the larger portion of crumb mixture, add egg and molasses. Blend in 3/4 cup boiling water. Dissolve baking soda in remaining water and add to batter. Pour into unbaked pie shell. Sprinkle reserved crumbs on top.

Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake 35 to 40 minutes longer. Makes 8 servings.

NOTE: This is a very, very sweet and firm pie.
