MORAVIAN SUGAR CAKE 
2 pkgs. dry yeast
1/2 c. lukewarm water (105 to 115 degrees)
1/2 c. sugar
1/4 tsp. salt
1/2 c. butter, melted
1 egg plus 1 egg yolk, well beaten
1/2 c. hot mashed potatoes (can be instant)
2 3/4 c. sifted flour

TOPPING:

1 c. sugar (brown)
2 tsp. cinnamon

Mix the above together.

In large bowl, sprinkle yeast onto water. Stir until dissolved. Stir in sugar, salt, butter, eggs and potatoes; blend thoroughly. Add half of the flour and with spoon beat until smooth. Add remaining flour; mix well.

Cover bowl with foil and refrigerate at least 12 hours. Turn into greased jelly roll pan. Spread evenly with floured fingers. Let rise until double in bulk--2 hours. Make shallow impressions 1 inch apart with index finger. Sprinkle brown sugar-cinnamon mixture over the dough. Drizzle with 1/2 cup melted butter. Bake about 20-25 minutes in a 400 degree oven.
