BARBECUED PORK CHOPS A'LA
JOSEPHINE
 
2 to 4 pork chops
1/3 c. ketchup
1/2 tsp. ground ginger
1/2 tsp. dry mustard
1/3 c. chopped onion

Brown pork chops in good fat (bacon fat). Cover with chopped onions after seasoning to taste with salt and pepper. Mix ginger and mustard with ketchup. Add to mixture about 1/2 cup water and pour over chops. Cover and cook over low heat until tender, approximately 1 hour. May be necessary to add more water. Serves 2 to 4. Serve with rice.
