PEANUT BUTTER PINWHEEL COOKIES | |
1/2 c. shortening 1/2 c. peanut butter 2 tbsp. milk 1/2 tsp. salt 1 c. sugar (can use half white & half brown) 1 egg 1 1/4 c. sifted flour 1 (16 oz.) pkg. chocolate chips Cream shortening and sugar until light and fluffy. Beat in egg, peanut butter and milk. Sift dry ingredients together and stir in creamed mixture. Place dough on lightly floured wax paper. Then roll into a 15"x8" rectangle. Melt chocolate chips over hot water, cool slightly and spread over dough. Roll jelly roll and chill 20 to 30 minutes. Slice 1/4" thick. Bake on ungreased cookie sheet at 375 degrees for 8 to 10 minutes. Yield: 4 dozen. |
