SQUASH CASSEROLE 
3 lb. cooked yellow squash
Salt and pepper to taste
5 ribs celery
1 sm. bell pepper
5 sm. green onions
1 lb. hot sausage or mild
1/4 c. Italian bread crumbs
1/2 c. grated cheese

Saute celery, bell pepper and onions. Fry sausage and drain grease from sausage and vegetables. Mix squash, vegetables and sausage with Italian bread crumbs. Place in baking dish. Top with cheese and Italian bread crumbs. Bake until real bubbly at 350 degrees.
