SWEET POTATO SCALLOP | |
2 tbsp. butter 1/2 c. soft bread crumbs or 1/2 c. corn flakes 1/3 c. dark brown sugar 1/4 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1 1/2 c. cooked sweet potatoes, sliced 1/4 inch thick 1 1/2 c. chopped apples 1 tbsp. fresh lemon juice 1/4 c. water Melt butter and add bread crumbs or corn flakes. Mix together with sugar and spices. Place 1/4 of crumb mixture in bottom of buttered casserole. Spread half of sweet potatoes and apples over them. Sprinkle with half of sugar and spices. Repeat. Sprinkle lemon juice and water and remaining crumbs over top of casserole. Cover. Bake at 350 degrees for 45 minutes. Uncover and brown quickly. |
