GERMAN PANCAKES 
1 tsp. butter
1/2 c. sifted flour
1 tsp. sugar
1/2 tsp. salt
3 eggs
1/2 c. milk
Powdered sugar
Lemon juice
Fresh or canned fruit

Preheat oven to 425 degrees. Sift flour, salt and sugar together. Beat eggs and milk together but not too well. Blend two mixtures together. (Final mixture should and may be lumpy. Do not overbeat.)

Take one 10-inch Pyrex glass pie dish and melt the butter in it, entirely covering the bottom. Pour mixture into dish and bake 18 minutes. At termination of this time, reset oven to 350 degrees and continue to bake for 8-10 minutes.

The sides will rise 3-5 inches, giving the appearance of a bowl. Make individual servings. Squeeze lemon juice on pancake and fill with fruit. Top with powdered sugar or Cool Whip.
