GERMAN PANCAKES 
1/2 c. flour
1/2 c. milk
Pinch of salt
4 lg. eggs
1 tbsp. butter
1 tbsp. shortening
Maple syrup
Powdered sugar
Butter

1. Mix flour, milk and salt until smooth. Add eggs, beat well.

2. Preheat oven to 425 degrees.

3. Melt butter and shortening in 9 to 10 inch slope sided pan with ovenproof handle. Pour batter into pan and cook on the stove until the bottom of the pancake is browned. Let uncooked batter remain on the top, about 2 to 3 minutes.

4. With a spatula turn the pancake quickly and make a criss-cross cut all the way through. Bake in pan for 12 minutes or until edges are browned.

5. Remove from oven and quickly cut into 6 servings. Serve immediately with maple syrup and powdered sugar.
