SWEET POTATO - PINEAPPLE
CASSEROLE
 
3 c. sweet potatoes, cooked or 1 lg. can
1/2 stick butter
2 eggs
1 c. sugar
1 tbsp. vanilla
1 tsp. cinnamon
3/4 c. drained pineapple tidbits
1/2 c. coconut

Cut sweet potatoes in small chunks. Mix together all the ingredients in order listed. Put in well-greased baking dish. Lightly cover the top with coconut and bake at 350 degrees until coconut is golden brown or hot through.

AN ALTERNATE FAVORITE TOPPING:

1/4 stick butter
2 tbsp. flour
1/2 c. brown sugar
1/4 c. chopped pecans

Sprinkle on top of casserole before baking.
