SWEET POTATO AND PINEAPPLE
CASSEROLE
 
Boil and mash sweet potatoes. Mix with enough pineapple juice from canned pineapple to make a soft consistency. Mix with chunks of pineapple (1/2 cup) and stir well into potato mixture. Place in casserole; sprinkle with chopped nuts or almond slivers. Dot with butter and bake.
