QUICK ONION SOUP 
1 lg. onion, sliced
1 tbsp. butter
1 tbsp. olive oil
1 can Campbell's onion soup
4 slices toasted stale Italian bread
4 thick slices Mozzarella cheese

Saute onion well in butter and olive oil but do not brown. Add soup and water (according to can directions), simmer 10 minutes. In round oven proof bowl place slices of toasted Italian bread on bottom (or use 4 individual oven proof bowls and put one slice in each), pour soup over bread, top with Mozzarella cheese and brown under broiler. (A dash of red wine and beef bouillon cube adds zest.)
