SPAGHETTI SQUASH PUDDING | |
1/2 of 8 inch squash 4 tsp. butter 2 eggs 1 fruit (1/2 c. raisins or fruit cocktail) 2 Sweet and Low 1 tsp. vanilla Cinnamon 1. Preheat oven to 375 degrees. Spray Pam in 5 x 7 inch small loaf pan. 2. Cut squash in half, crosswise. Steam for 20-25 minutes. When soft, remove strands with fork. 3. Beat eggs with fork in large bowl. Add squash strands and remainder of ingredients. Mix well and pour into pan. Sprinkle with more cinnamon and bake 45 minutes or until it tests dry with toothpick. 4. Brown under broiler. |
