SPINACH AND RICE CASSEROLE 
2 1/2 c. cooked brown rice
1 c. grated cheddar cheese
4 eggs, beaten
4 tbsp. fresh parsley, chopped
1/2 tsp. salt
2 (10 oz.) pkgs frozen chopped spinach, thawed and drained well
1 tbsp. oil
6-8 tbsp. wheat germ

Preheat oven to 350 degrees. Combine the cooked rice and cheese. Add eggs, parsley, and salt. Stir in the raw spinach and pour into an oiled casserole dish. Top with wheat germ which has been mixed with the oil. Bake in preheated oven for 35 minutes. Yield 6-8 servings.
