CHICKEN BROCCOLI CREPES 
Crepes
1/4 c. butter
1/4 c. Bisquick OR other prepared baking mix
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
2 c. chicken, cut up
1 jar (2 oz.) pimento, diced & drained
1 tbsp. snipped chives
1 lb. broccoli, cooked & drained OR 2 pkg. frozen broccoli spears, cooked & drained

Prepare crepes. Heat butter in 2 quart saucepan over medium high heat until melted. Stir in baking mix, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat; stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken, pimento and chives; heat until hot. Place 1 stalk broccoli on each warm crepe and roll up. Place 2 crepes, seam side down, on each plate and top with about 1/2 cup of mixture of chicken. Serves 6.
