EASY TWO-EGG OMELET WITH CHEESE 
2 eggs
1/4 cup shredded cheese, divided

Crack two eggs into a small bowl. Beat eggs with a fork until thoroughly mixed and yellow.

Heat a non-stick skillet to medium and pour egg liquid into the skillet. Let it cook for a short time, then lift edges to let the liquid seep under. Cook until there is no liquid left, but the eggs are not brown.

Sprinkle two-thirds of the cheese on the eggs, then fold in half and slide onto a plate. Sprinkle the rest of the cheese on the omelet.

Let stand for 1 minute, then serve.
