SWEET POTATO PIE 
1 unbaked 9" pie crust
2 lbs. sweet potatoes or equivalent in canned potatoes
1/2 c. butter
1 tsp. cinnamon
1/4 tsp. ground cloves
1/2 tsp. ginger
1/4 c. lemon juice
3 tbsp. brandy or sherry
1/4 tsp. salt
1/2 c. brown sugar
1/4 c. white sugar
3 eggs, separated
1/2 c. milk

Preheat oven to 450 degrees. Cook potatoes, peel and mash. Add spices, butter, sugars and salt. Beat until smooth and light. Beat yolks until light and add to above mixture. Stir in lemon juice, milk and brandy. Mix well. Beat egg whites until stiff and gently fold in. Pour into unbaked pie shell and bake 10 minutes. Reduce heat to 350 degrees and bake 25 to 35 minutes longer or until pie is puffed up and firm. Very rich. Better than pumpkin pie!
