SWEET POTATO PIE 
2 c. cooked sweet potatoes, mashed
1 1/2 c. white sugar
2 eggs
1 stick butter, melted
1 tall can milk
1 tsp. vanilla
1/2 tsp. lemon

Mix all ingredients together (can be mixed in blender). Pour into pie crust. Bake at 425 degrees for 10 minutes. Reduce heat to 325 degrees and bake 45 minutes longer.

PIE CRUST
2 1/2 c. plain flour
1 tsp. salt
1 c. shortening
1/2 c. milk
1 tbsp. vinegar

Mix flour, salt and shortening; set aside. Mix 1/2 cup milk with 1 tablespoon vinegar and stir into flour mixture, just until moistened. Roll out and place in greased pie pan. This can make 2 crusts.
