PLANTATION PIE 
1 1/2 c. cooked or canned sweet potatoes
1/2 c. firmly packed brown sugar
1 tsp. cinnamon
1/2 tsp. salt
3 egg yolks
1 c. milk
2 tbsp. melted butter
1/2 c. chopped walnuts
9" unbaked pastry shell
3 egg whites
9 tbsp. brown sugar

Mash sweet potatoes until free of lumps. Add 1/2 cup brown sugar, cinnamon and salt. Beat egg yolks and add to sweet potatoes. Add milk, butter and nuts; mix well. (Can be done in blender.) Pour into pastry shell. Bake in hot oven at 425 degrees for 10 minutes; reduce heat to 350 degrees and bake 30 minutes. Beat egg whites stiff, but not dry; gradually add remaining sugar, beating constantly. Swirl on filling. Bake at 325 degrees for 20 minutes.
