SUNSHINE SALAD 
1 (6 oz.) pkg. lemon gelatin
2 c. hot water
1 (5 oz.) jar pimento cheese spread
1 c. chopped celery
1 c. shredded carrots
1 (13 1/2 oz.) can crushed pineapple
1 1/3 c. salad dressing (mayonnaise type)

Dissolve gelatin in 2 cups hot water. While it is still hot, add pimento cheese spread. Allow mixture to cool. Add celery, carrots, salad dressing, pineapple (juice and all). Stir until well blended. Pour into 15 individual molds or large container. Chill until set.
