ZUCCHINI BREAD 
3 eggs
1 c. oil
2-1/2 c. sugar
3 tsp. vanilla
2-3 c. grated zucchini
3 c. flour
1 tsp. salt
3 tsp. cinnamon
dash of ginger
1 tsp. baking soda
1 tsp. baking powder
1-1/ tsp. nutmeg
1 c. nuts (chopped)

Beat together first 4 ingredients; Add; flour, salt, cinnamon, ginger, baking soda, baking powder, nutmeg, and nuts. Mix well and then add zucchini. Pour into a greased and floured bundt pan.

Bake 325°FF. for 1 hour. To make it chocolate, just add: 4 tbsp. cocoa.
