QUICK VEGETABLE - BEEF SOUP 
1 lb. ground lean beef
4 (10 1/2 oz.) cans beef broth
2 c. diced celery
2 c. diced potatoes
4 c. canned tomatoes
1 c. grated carrots
2 tbsp. (instant mixed) onion
2 1/4 tsp. salt
2 tbsp. chopped parsley flakes
1/4 tsp. pepper
1 tbsp. shortening

Brown meat in shortening in a 4 quart saucepan, then add remaining ingredients. Cover and cook 2 minutes or until vegetables are tender.
