QUICK VEGETABLE SOUP 
2 1/2 c. leeks, chopped and washed
1 c. chopped onions
1 c. sliced mushrooms
2 med. zucchini, sliced julienne
1 c. grated carrots
butter (about 1 to 2 tbsp.)
Angel hair pasta
Fresh herbs
Water

Saute leeks, onions, mushrooms, zucchini, and carrots in butter. Fill soup kettle with about 6 to 8 cups water. Bring to a boil, then lower flame and simmer 10 more minutes. Crush angel hair pasta in soup and cook 4 minutes longer. Serve with crushed fresh herbs on top. Serves 4 to 6.
