BARBECUED SPARERIBS | |
2 sm. sides pork spareribs (about 4 lbs.) 3/4 tsp. salt 1/2 c. chopped onions 2 cloves garlic, finely chopped 1/3 c. apricot preserves 1 tbsp. olive oil 2/3 c. ketchup 2 tsp. chili powder Fill 6-quart pot with water, add ribs and 1/2 teaspoon salt and boil until ribs are tender, about 30 minutes. In small skillet, saute onions and garlic in oil until golden. Stir in ketchup, preserves, chili powder and 1/4 teaspoon salt. Heat to boiling. Drain ribs, brush with sauce. Cook ribs on outside grill or under inside broiler, brushing with more sauce as needed. Cook until browned, about 5-7 minutes per side. |
