BACHELOR'S MEATLOAF 
1 lb. lean hamburger (or mix in some Italian sausage if you're feeling "gourmet")
1 sm. onion, chopped
1 egg
6 oz. can tomato sauce (get a fancy brand, got to do something to dress up a meatloaf)
1/4 c. sliced fresh mushrooms
Bread crumbs
Worcestershire sauce or steak sauce
Salt & pepper
(Optional: diced green pepper, green chilies)

Melt a dab of butter in a skillet. Pour in chopped onions and mushrooms (and green pepper, if desired). While mixture is cooking, put meat in a large mixing bowl, add the egg (unbeaten), a healthy dollop of Worcestershire (don't be too stingy!). When onions are sauteed to your taste (I like mine cooked a little past the "transparent" stage), add them to the mixture.

Then add bread crumbs (I don't know, about 1/2 a cup, I guess), two-thirds of the can of tomato sauce, pepper and a dash of salt, and then get your hands in and mix it all up until it is just right, and shape into a loaf. Then put it in baking dish and shove into a preheated 350 degree oven. Cook for 40 minutes. Then pour remainder of tomato sauce over the loaf. Continue cooking for 20 more minutes.
