CORN CASSEROLE 
1 can whole kernel corn
1 can cream style corn
1 pkg. Mexican cornbread mix
4 green onions
1/2 c. grated Cheddar cheese
2 eggs
1 stick butter

Melt butter in casserole dish. Mix all other ingredients and pour over butter. The butter will come to the top and cover the casserole. Bake at 350 degrees for 45 minutes. Additional cheese may be grated on top as soon as you take from the oven.

NOTE: I use only 1 egg and 1/2 stick of butter to make this dish have less cholesterol, I think it tastes just as good.
