POTATO LOGS 
2 tsp. water
1 tsp. instant minced onion
1/2 c. dairy sour cream or plain yogurt
4 tbsp. butter, divided
1 tbsp. chopped parsley
1/2 tsp. salt
8 med. potatoes, cooked and mashed
1/8 tsp. dried dill weed
Dash black pepper
1 1/2 c. soft bread crumbs
1/4 c. grated Parmesan cheese
1/8 tsp. paprika

Grease a 13x9 inch baking dish; set aside. In a small bowl, combine water and onion; let stand 10 minutes. Add sour cream, 2 tablespoons of the butter, parsley and seasonings; blend well.

In a small saucepan, melt remaining 2 tablespoons butter. Add bread crumbs, cheese and paprika; blend well.

Using 1/4 cup of the mashed potatoes at a time, shape into 4 inch logs. Roll logs in crumb mixture. Place in prepared baking dish. Bake at 400 degrees for 30 minutes or until golden brown. Serves 6.
