POTATO SALAD 
2 lbs. potatoes (about 6 med.)
1/2 c. chopped onions
1 tsp. parsley
1 tsp. lemon juice
1 tsp. apple cider vinegar
1/2 c. chopped celery (fine)
1 tbsp. mayonnaise
1 tbsp. yogurt

Clean potatoes; peel and cook until you can stick fork into them. Cool for 1 hour. Cut potatoes into cubes or small pieces. Add onions, parsley and celery. Then add yogurt and mayonnaise. Then add lemon juice and apple cider vinegar. Mix everything together; cover and refrigerate for 2 hours.
