2 chicken breast halves, boneless, skinless, cut into 1" pieces 1 c. carrots, chopped 1/2 c. onion, chopped 1/2 c. celery, chopped 1/2 tsp. thyme leaves, dried 1/4 tsp. pepper 2 cloves garlic, minced 1 (8 oz.) can tomato sauce 2 (15.5 oz.) cans Great Northern beans, drained 4 oz. turkey ham, cooked, cut into 3/4" pieces 2 tbsp. parsley, fresh, chopped In large nonstick skillet over medium-high heat, combine chicken, carrots, onion and celery. Cook and stir 3-5 minutes or until chicken is no longer pink. Add thyme, pepper, garlic and tomato sauce. Reduce heat; cover and simmer 5-7 minutes or until vegetables are tender. Stir in beans and turkey ham; cook until thoroughly heated. Just before serving, sprinkle with parsley. Makes 5 servings. |
