SCRAMBLED EGG CASSOULET 
1/4 c. chopped green pepper
1/8 c. butter
6 beaten eggs
1 tbsp. butter
1 tbsp. all-purpose flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk
1/2 c. shredded American cheese (optional)
1/8 c. chopped pimento
3/4 c. soft bread crumbs (about 1 1/2 slices)
1 tbsp. butter

In skillet, cook pepper in 1/8 cup butter until tender. Add eggs; scramble just until set. Set aside.

In saucepan, melt 1 tablespoons butter; blend in flour, salt, and pepper. Add milk; cook and stir until thickened and bubbly. Add cheese, if desired, stir until melted. Remove from heat, fold in eggs and pimento. Turn into 2-quart casserole. Toss crumbs with 1 tablespoon butter, sprinkle on top of casserole. Bake at 350 degrees for 20 to 25 minutes. Serves 4.
