TOOTIE'S SCRAMBLED EGG CASSEROLE 
CHEESE SAUCE:

2 tbsp. butter
2 1/2 tbsp. flour
2 c. milk
3/4 tsp. salt & pepper
1 c. American/Velveeta cheese, shredded
1 c. ham, cubed
1/4 c. green pepper & onion
3 tbsp. butter, melted
1 doz. eggs, beaten
1 (4 oz.) can mushrooms

TOPPING:

1/4 c. butter, melted
2 1/4 c. soft bread crumbs

To make sauce, melt butter, blend in flour and cook 1 minute. Stir in milk, cook until thick. Add salt and pepper and cheese. Stir until cheese melts. Set aside. Saute ham, green pepper and onion in 3 tablespoons butter until onion is tender. Add eggs and cook over medium heat until eggs are set. Add mushrooms. Spoon eggs into 9 x 13 inch pan. Mix topping. Spread over egg mixture. Cover, chill overnight. Uncover and bake at 350 degrees for 30 minutes.
