SPINACH QUICHE 
1 baked pie crust
1 tbsp. onion, finely chopped
1 c. shredded cheese (any kind)
2 eggs, lightly beaten
1 c. plain yogurt
1 tbsp. flour
salt and pepper to taste
1 c. spinach, chopped and cooked

Preheat oven to 450°F. Sprinkle onion and cheese over crust. Blend together all remaining ingredients, adding spinach last. Pour over cheese and onions.

Bake at 450°F on the bottom rack for 15 minutes. REDUCE heat to 350°F and bake 30 minutes longer. Remove from oven and let cool 5 minutes before serving.
