GARDEN PIE 
2 c. diced or chopped zucchini
1 c. chopped tomatoes
1/2 c. chopped onions
1 1/2 c. milk
3/4 c. bisquick mix
3 eggs
1/2 c. grated Parmesan cheese
1/4 tsp. pepper
1/2 tsp. salt

Preheat oven to 400 degrees. Sprinkle zucchini, tomato, onion, and cheese in a lightly greased 10 inch pie plate. Beat remaining ingredients until smooth. Pour into pie plate. Bake until golden brown for 30 minutes. Garnish with tomato and zucchini slices if desired. Put in the refrigerator and take out the next day. Mix a green salad to serve with it.
