RICE FLAN 
Makes 6 servings:

4 eggs
1 c. milk
1 c. cooked rice
1 can sweetened condensed milk
1 tsp. vanilla extract
1 tbsp. sugar
1 tsp. cinnamon

1. Preheat oven to 350 degrees F.

2. In a large mixing bowl, beat eggs. Add milk, rice, condensed milk, and vanilla. Mix well. Spoon into a buttered shallow 1 1/2 quart baking dish.

3. Mix together sugar and cinnamon. Sprinkle on top of rice mixture.

4. Set dish in a pan containing 1 inch of hot water. Bake for 45 minutes. Serve warm or chilled.
