SWEET POTATO SOUFFLE 
2 1/2 c. mashed sweet potatoes
2 eggs
1 c. sugar
1 tsp. orange flavoring
1 tsp. vanilla extract
1/2 c. milk
3/4 stick butter
Dash salt

TOPPING:

1 stick melted butter
2 c. chopped pecans
1 c. light brown sugar
1 c. flour

Mix together well and pour into greased baking dish. Crumble topping over sweet potato mixture and bake for 45 minutes at 325 degrees. Add miniature marshmallows on top during the last few minutes and bake until marshmallows are lightly browned.
