PUMPKIN WALNUT CAKE 
3 c. flour
3 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
3 1/2 tsp. cinnamon
1 (14-16 oz.) can pumpkin
4 lg. eggs
2 c. white sugar
1 1/2 c. Crisco oil
1 c. chopped walnuts
Confectioners' sugar

On wax paper, sift together flour, baking soda, baking powder, salt and cinnamon. In large mixing bowl, with electric mixer at high speed, beat eggs, gradually add sugar beating until thick and lemon color. Beating constantly, add oil. With mixer at low speed blend in sifted ingredients alternately with pumpkin, beginning and ending with dry ingredients. Beat until smooth after each addition. Stir in walnuts. Turn into ungreased tube or angel food cake pan. Bake at 350 degrees for 1 hour 10 minutes, maybe more. When done, place cake in pan on rack to cool. Remove from pan, sprinkle with powdered sugar. Also good with whipped cream.
