MOTHER'S KOSHI 
6 lg. Idaho potatoes, peeled and grated
1/2 lb. bacon, cut in sm. pieces and fried until crispy
1 lg. onion, diced and browned in bacon grease
1 c. flour
2 tbsp. baking powder
1 tsp. salt or to taste
2 lg. eggs (beaten)

Preheat oven to 375 degrees. Grease 13x9 pan.

Cut up 1/2 pound bacon, fry until crispy. Add chopped onion and brown in bacon grease. Grate potatoes. Add all ingredients to grated potatoes. Pour into greased baking dish. Sprinkle some oil on top of potato mixture and bake in oven for approximately 1 1/2 hours. If bottom browns too much, raise to higher shelf. Cut in squares. Serve with sour cream. Enjoy!
