RAVE REVIEW ZUCCHINI CASSEROLE 
3 c. finely diced zucchini
1/2 c. salad oil
1/2 tsp. salt
1 c. diced onion
1 1/2 c. grated Monterey Jack cheese
1/4 tsp. pepper
1 c. Bisquick
3 lg. eggs

In large bowl gently mix zucchini, onion, 3/4 cup of cheese and the Bisquick. In smaller bowl, beat together eggs, oil, salt and pepper until frothy. Blend the mixtures together thoroughly. Spread in a well greased 9"x13" pan. Sprinkle with remaining 3/4 cup of cheese. Bake at 350 degrees for 40 to 45 minutes until set and golden brown on top. Delicious served hot, warm or cold. Breakfast, lunch or dinner, even as a sandwich filler, between toasted whole wheat bread.
