RAVE REVIEWS CHOCOLATE
CHEESECAKE
 
2 c. crushed vanilla wafers or honey grahams
5 tbsp. butter
2 tbsp. sugar

FILLING:

4 separated eggs
1 c. plus 6 tbsp. sugar
12 oz. semi sweet chocolate
1/4 c. extra strong black coffee
1 tsp. plus 1/2 tsp. vanilla
3 (8 oz.) pkg. cream cheese
1 c. heavy cream, whipped
Shaved chocolate to garnish

Butter, then chill a 10 inch springform pan. Blend together crust ingredients and press into bottom of pan. Beat yolks and 1/2 cup sugar until light and lemon colored. Melt chocolate with coffee and 1 teaspoon vanilla. Cool. Beat cheese until smooth.

Add yolk mixture, then cooled chocolate mixture. Beat whites with 1/2 cup sugar until stiff, but not dry. Fold into chocolate/cheese mixture. Spoon into pan and bake 1 hour. Turn off oven and cool in oven with door open. Refrigerate before serving.

Remove from pan and spread with whipped cream that has been sweetened with 6 tablespoons sugar and 1/2 teaspoon vanilla. Garnish with shaved chocolate. Serves 12.
