FLUFFY COMPANY CAKE | |
1 box yellow cake mix 1 (11 oz.) can mandarin oranges with syrup 4 eggs 1/2 c. vegetable oil FROSTING: 1 (8 oz.) original Cool Whip 1 (3 oz.) pkg. instant vanilla pudding 1 (20 oz.) can crushed pineapple with juice Coconut (opt.) Mix cake mix, oranges with syrup, eggs and oil in large bowl until oranges are broken up and batter is fluffy, about 3 minutes. Divide batter among 3 greased and floured 9" pans. Bake at 350 degrees for 25 to 30 minutes. When cool, frost only between layers and on the top. FROSTING: Mix pineapple with juice and pudding mix on slow speed. Add Cool Whip and blend well. Add coconut to mixture, or sprinkle on top. Garnish with reserved oranges, if desired. Refrigerate. Serves 12. |
