FLUFFY YELLOW CAKE WITH
MARSHMALLOW TOPPING
 
2 1/4 c. sifted flour
1/4 tsp. salt
2 1/2 tsp. baking powder

Sift above ingredients into mixing bowl. Into blender container, put:

1/2 c. shortening or soft butter
1 1/2 c. sugar
2 eggs
1 tsp. vanilla

Cover and blend on high speed for 15 seconds. Uncover and with motor on gradually add 1 cup milk. Pour mixture over dry ingredients and stir to combine thoroughly. Spoon mixture into greased 8"x12" baking pan.

Arrange marshmallows over top, keeping them 1" from sides of pan. Sprinkle over mixture of 1/2 cup chopped pecans or walnuts and 1 cup brown sugar. bake at 350 degrees for 40 minutes or until cake tests done. Cool and serve from pan.
