RICE MEAT BALLS 
1 c. Minute Rice
1 lb. ground beef
1 egg, slightly beaten
2 tbsp. diced onion
2 tsp. salt
1/8 tsp. pepper
2 1/2 c. tomato juice
1/2 tsp. sugar

Combine Minute rice, beef, egg, onion, salt, pepper and 1/2 cup tomato juice. Mix lightly; shape mixture into 18 balls and place in skillet. Add sugar to remaining 2 cups tomato juice. Pour juice over meat balls. Bring mixture to boil; reduce heat and simmer, covered, for 15 minutes, basting occasionally. Makes 6 servings.
