2 sticks butter 1 c. white sugar 1 c. brown sugar 4 eggs 1 1/2 c. buttermilk 2 c. jam 2 c. preserves (any kind) 1/2 tsp. nutmeg 2 c. mincemeat 4 c. self-rising flour 1 c. raisins 2 tsp. baking soda 1/2 c. cocoa 1 tsp. vanilla 1 tsp. cinnamon 1 tsp. allspice Mix all dry ingredients together. Cream butter and sugar. Add milk and eggs. Mix raisin with flour, also jam and preserves. Then mix all together. Bake in 4 (10") cake pans or in a tube pan. CARAMEL ICING: 1/2 c. buttermilk 1/2 c. butter 1/2 c. sugar 1 tsp. vanilla Boil 1 or 2 minutes. Cool and add enough sugar to make of spreading consistency. Add vanilla and beat well. |
